I don’t think there is anything to be worried about. All the highways these days have big blue signs that tell you of restaurants, gas stations, etc that are off the road and if they are close to the highway you can tell if they are open or not.
Many people will be driving along the road with you as well since you are staying on a major interstate so really there is nothing to be concerned about as long as you don’t pick up a hitch hiker.
Just make stops at places where there are other people and park in well lit areas where it is busier.
I would just calm down and plan fun places to stop! As long as you have a cell phone that will help you keep in touch.
